Looking to see if anyone has any thoughts or ideas on sourcing (a) flywheel(s) for bike/human powered shredders? Particularly in the United States, or rural areas, the less expensive the better

Use a flywheel (it's what the clutch engages with) from a manual transmission vehicle? It'll have a ~6 bolt pattern, you can vary the mass based on how large of a vehicle you source from. If you talk to an auto shop this is regularily thrown away part since they're often replaced (sometimes resurfaced and reused) from doing a clutch replacement.
