I honestly wouldnt know where to start with this idea but i support your quest and hope you find the help you need it could be worth while speaking to other charity shops to see how they have set up and have got started. What would your shop be selling and what donations would your shop bee looking for?
When i was getting into plastic recycling it was inspired by a charity shop. At the time i was a jewellery design graduate that was trying to set up an eco jewellery business specialising in jewellery repair and jewellery recycling the idea stemmed from a charity shop local to ne throwing out bags apon bags of old beaded necklaces wooden bead curtains and odd pieces or broken jewellery. I thought wouldnt it be nice to turn up as a jewellery designer to purchase bags of old beads which are sorted out to make new designs with or a product designer able to salvage mass amounts of one type of bead to make beaded products for a client or new product. Friends and family started my bead build up collection couple of charity shops gave me a bargan buy for a few pounds then i came to the massive hurdle of premises and rent/deposits unless i operated under a registered charity which is a long procedure to obtain registration

I want to disassemble kitchens & bathrooms (instead of destroying them in the removal process) and then resell them. If that works, I'll grow the business to other areas of construction waste.

But basically the construction industry is a huge contributor to landfill (I think the biggest in the UK), and a lot of it is unused material, which is bonkers.

I am based in France (Strasbourg) but I have a local example of similar projet of recycling / reusing construction material.
It's called BoMa Les Bonnes Matières, you can check their facebook to get a feel of what they do: https://www.facebook.com/BOMAAlsace/
Basically, they go on construction and demolition sites, and they try to make links between scrap materials and needs. From what I understood, it is mostly project engineering.
They also had a physical store with materials, but it was difficult (and not economically relevant) to manage, and they ended up storing unsold materials from retails, which was missing the point.
I am pretty sure they speak English in the team, so you can ask them for more details.
And I fully agree on the need to prevent all these materials to go to landfill. In France, construction materials make up 70% of our waste, so they make all the Zero Waste stuff kind of irrelevant (I am a strong supporter of Zero Waste, but also very aware it is a drop in the ocean of the global waste issue).
